FAQ
Q1: Why does squid curl after it is heated?
Squid muscle contracts during cooking. With this product, the cross-hatch scoring creates sections that contract differently from the unscored flesh, causing the piece to curl and open into a flower-like shape.
Q2: Why do some pieces curl more than others?
Curling is affected by scoring depth, scoring density, squid thickness, piece dimensions and cooking conditions. The scoring is designed to reach approximately two-thirds of the flesh thickness without cutting through the piece. Quick, high-heat cooking generally gives a more pronounced result than slow heating.
Q3: Does Peruvian Gigas squid require de-acidification?
The raw meat of Dosidicus gigas can have a naturally acidic taste. This product includes a de-acidification step as part of the specified processing. If a customer has a different processing requirement, the treatment should be confirmed before production.
Q4: What is the difference between Gigas and Illex for this product?
Gigas has a relatively large mantle and thick flesh, making it suitable for larger scored pieces and the characteristic flower presentation. Illex (Illex argentinus) generally has a different flesh structure and texture. The two species can be selected according to the required bite, piece size and application.
Q5: Can the scoring pattern and piece size be customized?
Yes. Scoring density, scoring pattern and piece dimensions can be adjusted within the production range. Glazing and packaging can also be specified for different customers and sales channels.
Q6: What export documents can be provided?
Standard export documentation can include the Bill of Lading, Commercial Invoice, Packing List, Health Certificate, Certificate of Origin and other documents required for the destination market.
